India sweets have always been mouth-watering. Although not all but some of the sweets like kheer, gajar ka halwa, laddoos, etc. have always been part of a daily Indian meal from decades. It is said that "Sweet or Dessert after large meals help to digest food easily also, the sugary dessert is a source by which the serotonin level rises which makes people feel happier and satisfied.
Gajar ka halwa with milk | carrot halwa made with milk is the most common yet popular sweet made during festivals and after-meal dessert. This sweet is made with carrots, ghee, sugar, milk & dry fruits. As this sweet can be cooked both in a traditional and instant way I have used the traditional way for cooking but, if you are running out of the time you can cook the instant way & save 30 to 40 min depending on the quantity.

Ingredients
- 4 large Grated Carrot
- 1 tbsp Ghee
- 3 cup of Cream milk
- 1/2 cup Sugar
- Powdered cardamom
- Mixed dry fruits of your choice
Recipe
Step 1: wash, peel & grate the carrots
Step 2: cook carrot / gajar halwa in low flame.
Step 3: Add 1 tbsp of ghee & sliced dry fruits in pan. Roast it for one minute
Step 4: add grated gajar /carrot to the same pan & cook it for 2-3 minutes until it turns soft.
Step 5: Add 3 cups of full cream milk
Step 6: Mix well and let the milk comes to boil. Stir in between so that milk doesn't stick to the bottom of the pan
Step 7: Cook carrot and milk in low flame until the ½ milk is evaporated
Step 8: Add 1 cup of sugar (adjust more or less as per your taste) once the ½ milk is evaporated.
Step 9: Once again, cook the halwa until the sugar and milk are completely evaporated. (Stir continuously)
Step 10: Your gajar ka halwa is ready. Serve cold or hot as per your desire.

Tips: You can use jaggery instead of sugar
: For instant cooking, you can pressure cook instead of making in pan
: Use condensed milk (milkmaid) instead of milk for instant cooking
