Rajasthani Lehsun Ki Chutney - Garlic Chutney


Our friends invited us for a "Diwali Dinner Party". As we reached the guest were arrived and our host was looking beautiful as always in her traditional Rajasthani dress. My friend belongs to a  Marwari family from Rajasthan. 

The dinner table was all set with traditional Indian Rajasthani foods and side dishes. The one I liked the most was Rajasthani Lehsun Ki Chutney or Red Chilli & Garlic Chutney. It was filled with spicy kick and aromatic garlic infusion, leaving a lasting impression on my palate.


What is Rajasthani Lehsun Ki Chutney?

Chutney, that typically originates from the Royal State of Rajasthan. This chutney is a part of everyday meal for people residing in this State. Made with red chilli mixed with garlic & oil this is the spiciest chutney I ever ate .Yeah, it's really spicy although, while cooking at your home chillies can be adjusted as per your taste buds. 

It can be stored for 1 to 2 weeks a perfect dish for travelers. You can eat with daal batti, chapaati or  rice as per your preference

Ingredients Required & How to Cook?

You require the following basic ingredients and can be cooked in approx. 10 to 14 minutes of time.

Ingredients :

  • 4-5 Red Chilli's
  • 4-5 Garlic
  • Salt
  • Mustard Oil

Method: 

Step 1- Soak red chilli's in hot water for 2 hours. 

Step 2- After soaking the chilli's for 2 hours strain it from hot water, reserve the infused water for later use .

Step 3 - Transfer & grind the the chillies in mixer grinder. However, the chutney texture should maintain the balance not be overly fine nor dominated large chunks

Step 4 - Grind 7-8  cloves of garlic adjusting the water consistency. 

Step 5 - In a non-stick pan, heat 2-3 tbsp of mustard. Once the oil is hot, delicately transfer the mixture of chili and garlic paste into the pan by adding the infused chilli water. Cook for 3-4 minutes. Add salt as per taste & cover with lid allowing to cook for more 2-3 minutes & then turn off the flame.

Things to Remember

  • 1. Chilli & Garlic's can be adjusted as per your taste preference.
  • 2. Store in an air tight container 
  • 3. Can be used for 1-2 week
